Coriander
All parts of the plant are edible, but the fresh leaves and the dried seeds are the parts most traditionally used in cooking. aka “Chinese Parsley”
Dill
Dill is aromatic used to flavor many foods such as salmon and other fish dishes, borscht and other soups, as well as pickles (where the dill flower is sometimes used). Best when used fresh.
Fennel
Annual. Large bulb at the base of the plant is used in salads or cooked as a vegetable. Anise-like flavor.
English Lavender
English lavender is commonly grown as an ornamental plant. It is popular for its colourful flowers, its fragrance and its ability to survive with low water consumption.
Lemon Balm
Heart shaped leaves, lemon fragrance. Attracts bees. Tea works well at calming nerves and is used to treat insomnia.
Rosemary
Tender Perennial. Use needle-like leaf tips sparingly to flavor meats and sauces.
Sweet Marjoram
Tender Perennial. Used fresh or dry , similar flavour to oregano.
