CABBAGE

Early

This cabbage is a favourite for early harvest, forming a conical, pointed, dark green head with a smooth, sweet flavor. The head is slow to split and slow to bolt. Rich in vitamins and minerals. Some gardeners consider this the best tasting of all cabbages.

Late

Some varieties of cabbage can take up to 120 days to reach maturity and will be ready to harvest by the end of December if planted at the end of August. These cabbages are known as late varieties.

Red

The red cabbage is a sort of cabbage, also known as purple cabbage, red kraut, or blue kraut after preparation. Its leaves are coloured dark red/purple. It is a seasonal plant which is seeded in spring and harvested in late fall. Red cabbage is a better keeper than its “white” relatives and does not need to be converted to sauerkraut to last the winter.

Savoy

Savoy cabbage is a Winter vegetable. It can be used in a variety of recipes. It pairs well with red wine, apples, spices, horseradish and meat. It can be used for roulades, in stews and soups, as well as roasted plain and drizzled with olive oil. Peak season for most cabbages runs from November through April.
