Bishop’s Crown

The bishop’s crown, Christmas bell, peri peri, or joker’s hat, is a pepper, a cultivar of the species Capsicum baccatum var. pendulum.It is named for its distinct three-sided shape resembling a bishop’s crown.

Cayenne

Long Slim Red Cayenne is one of the best known hot chili peppers, it is a good long hot chilli that always performs well and dries nicely.

Cherry Hot

Named for its cherry-like shape, this little pepper is a moderately hot version of the popular sweet cherry. Vigorous and productive. The pretty little golf ball-sized fruits mature from green to red. Add them to salads, or use them in pickling and preserving.

Green chiles are a common ingredient in Mexican food. Green chiles come in thousands of varieties, and even some of the same types go by different names.

Hot Banana

The banana pepper (also known as the yellow wax pepper or banana chili) is a medium-sized member of the chili pepper family that has a mild, tangy taste. Banana Peppers are excellent for pickling, frying, or roasting. Just hot enough to provide a little bite without scaring away the milder palates in the family.

Hot Hungarian

Hot Hungarian peppers are easy to stuff and to peel after roasting; thick-fleshed for frying. Its sunset-ripening peppers change from yellow to orange to red, and make attractive pickled peppers. Definitely, but not overly, hot.

Hot Portugal

Hot Portugal peppers are one of the best hot peppers around. This sweet and spicy pepper is long with thin flesh. These peppers are great fresh: sauteed in soups, stews, and added to stir fries for some heat. Dried and crushed, these peppers make some of the best red chile flakes around.

Jalapeno

Jalapeño chillies range from moderately to very hot. They are dark green when young and scarlet when ripe, and are sold both fresh and tinned. Dried and smoked, they are known as chipotle, and take on a deep, sweet flavour that some say has a slight chocolate note.

Mazzitti variety of peppers are crisp bright red colored beauties. They start off as green fruits and change color to bright red. They have a sun soaked flavour and are moderately hot.

Red Chili

The chili pepper is the fruit of plants from the genus Capsicum, members of the nightshade family, Solanaceae.

Ring of Fire

Newer variety that’s an improvement over Cayenne. Similar type and similar heat (around 70,000 – 80,000 scovilles) but earlier and more productive. Very smooth, bright red 4-inch pods are excellent for drying. The name says it all!

In Thai cuisine, these chilis are highly valued for their fruity taste and extreme spiciness. They are extensively used in many Thai dishes, such as in Thai curries and in Thai salads, green as well as the ripe red chilis; or they can just be eaten raw on the side, with for instance, khao kha mu (stewed pork trotter served with rice).
