SQUASH

Acorn

Acorn squash, also called pepper squash is a winter squash with distinctive longitudinal ridges and sweet, yellow-orange flesh. Acorn squash is most commonly baked, but can also be microwaved, sauteed or steamed. It may be stuffed with rice, meat or vegetable mixtures. The seeds of the squash are also eaten, usually after being toasted.

Buttercup

Buttercup squash is one of the most common varieties of this winter squash, with a turban shape (a flattish top and dark green skin), weighing three to five pounds, and normally heavy with dense, yellow-orange flesh.

Butternut

Butternut squash has a sweet, nutty taste similar to that of a pumpkin. It has yellow skin and orange fleshy pulp. When ripe, it turns increasingly deep orange, and becomes sweeter and richer.

Hubbard

The Hubbard squash usually has a tear-drop shape. They are often used as a replacement for pumpkins in cooking. There are two common types of Hubbard squash. One has a bluish-gray skin. The other major variety, the golden hubbard squash, has a bright orange skin.

Pumpkin – Jack O’ Lantern

Pumpkins are often round, with smooth, slightly ribbed skin and deep yellow to orange coloration. The thick shell contains the seeds and pulp. Pumpkins are widely grown for commercial use, and are used both in food and recreation.

Spaghetti

Spaghetti squash is an oblong seed-bearing variety of winter squash. The fruit can range either from ivory to yellow or orange in color. Its flesh is bright yellow or orange. When raw, the flesh is solid and similar to other raw squash; when cooked, the flesh falls away from the fruit in ribbons or strands like spaghetti

Zucchini – Green

The Zucchini is a long cylindrical vegetable, usually dark green in colour. The flesh is a pale greenish-white and has a delicate almost sweet flavour.

Zucchini – Yellow

Yellow zucchini, sometimes called golden zucchini, does not taper at the ends like yellow summer squash. It’s flavor is a bit sweeter than traditional green zucchini. Try mixing yellow and green in your stir-fry to add visual appeal.

Zucchini – Sicilian

These Sicilian zucchini, or cucuzza squash, need to dangle from fences or clothes lines to grow to their lengths, but the longer you grow them, the bigger the seeds get inside (and less flesh there is to eat!). They have a very light flavour, as opposed to the typical smaller, dark green zucchini you might buy at the store.
