Long Slim Red Cayenne is one of the best known hot chili peppers, it is a good long hot chilli that always performs well and dries nicely.

Newer variety that’s an improvement over Cayenne. Similar type and similar heat (around 70,000 – 80,000 scovilles) but earlier and more productive. Very smooth, bright red 4-inch pods are excellent for drying. The name says it all!

They are extensively used in many Thai dishes, such as in Thai curries and in Thai salads, green as well as the ripe red chilis; or they can just be eaten raw on the side, with for instance, khao kha mu (stewed pork trotter served with rice).
